The easiest is perhaps a custard pie
Berry is easy also but, I think it is hard to find good berries during snow it is a summer pie
Custard Pie
1 rolled out unbaked pie crust
4 chicken eggs
3/4 cup refined sugar
1/4 teaspoon salt
1 teaspoon vanille
1 cup heavy cream (from cow)
1 1/2 cups cow milk
1/4 teaspoon ground nuts-meg spice
Instructions
1- Put crust in pie pan.
2- In 2 small bowls separate one egg white from egg yolk. Beat egg white until frothy
3- Brush crust with beaten egg white and pre-bake for 8 minutes or the length of time to run mile. Let cool for 10 minutes.
4- In large bowl whisk together 3 eggs plus the one spare yolk and whatever is left from the beaten egg white, sugar, salt, vanille, heavy cream and cow milk.
5- Pour egg mixture into pie crust and sprinkle with nutmeg.
6- Bake for 35-45 minutes or until knife inserted in center comes out clean.
7. Cool on a wire rack.

Ehehe, seems a lot of people are suggesting apple, but this time of year apparently has another good one that's pretty popular!
It's a pumpkin pie, if you like sweet and a TINY bit spicy.
I looked up a particularly easy recipe, and it's one I actually made before, last month, so I definitely recommend it!!
Here is the recipe!
Honestly, the hardest thing to do is wait for it to bake and cool a little - everything else is super duper simple, especially if you get a ready-made crust.
OH!! And I highly suggest getting some whipped cream to spoon on top, but it's not 100% necessary.
Course you can make that, too, but it takes a little longer.
