But then also I understand well that taste is important, and that people can be quite particular when it comes to their food. I wonder if there are other sauces with similar followings...?

The housekeepers I grew up with said that mayonnaise is one of the parent sauces in cooking - is that the case elsewhere? So it must be so. And it has its derivatives that may be served hot as well.

Forgive me. You meant hot in terms of spice, not temperature.
