Well, I was trying to combine the flavour profiles of a Thai and Indian style curry... ( She just wanted it to be a little spicier, not... nuclear red. )

Well, there isn't much that I can recommend that others haven't already, aside from a nice tea to rinse it all down.

It depends on the curry, of course, but sugar or any kind of milk, cream or coconut milk can help make the curry milder.

You can also increase the volume of other ingredients to offset it.

Though that depends on how much more chilly has been added.

That's my problem. I finished a lot of possible ingredients with this curry.

( Cream and coconut milk are right out, as is making the curry bigger. )
