I am no culinary expert but I would think that would depend on how you prefer to take your seafood. Raw, smoked, or cooked - for salmon in particular, each of those three states ask for quite different accompaniments in one's sandwich.
That aside, surely a wrap as you're describing would taste better with the appropriate piece of pastry. Not a long slice of bread.
